Herb buttered whole roast chicken (GF, NF)
This is a lovely large chicken (approx. 2kg in size) with a delicious her butter inserted under it's skin. The herb butter is made from a mix of butter, sage, thyme, parsley, lemon zest, garlic, salt and pepper and we've inserted a whole lemon into the chickens cavity.
To cook defrost in your fridge overnight. Pre-heat your oven to 180 degrees fan forced and roast for approx. 1.45-2 hours or until you insert a knife/skewer into the meat and the juices run clear. Baste/spoon the juices over the chicken a few times during cooking for a lovely golden skin. This one's sure to be a crowd pleaser.
Serve with a salad or your favourite roast vegetables.
