NEW - Chunky beef and mushroom pie (NF)
Tender, chunks of beef with mushrooms in a delicious gravy topped with golden puff pastry.
We start by browning the chuck beef and putting aside. Next we add the sautée the onion, garlic, carrots and celery until soft and sweet. We then add chunks of carrots and flour and beef stock and stir through. Next we add thyme, bay leaves, shiitake and cooked beef and simmer slowly for 2 hours until the beef is tender. Meanwhile we fry off our bacon and add mushrooms and cook for a few minutes until brown and we then add these to the beef mix and cook for a further 15 minutes until the mushrooms are tender.
To cook; Preheat oven to 200 degrees. Place the pie on a tray and cook for about 30 minutes until the top has puffed up. Then lower the temperature to 180 degrees and cook for a further 45 minutes (approx) until the filling is bubbling through the pastry and the top is golden. Cover if the top if colouring too quickly.
Serve with some steamed green vegetables and mashed potato..
