Broccoli, Cauliflower and Cashew Curry (GF) (DF) (Veg) (V)
This is a new vegetarian dish that is full of flavour. With a coconut milk base this is a great dish for the whole family. To make it we make a curry mix out of cumin, onion, garlic, ginger, curry leaves, cayenne pepper (just a pinch), garam masala and curry powder. We then add coconut milk and loads of couliflower, broccoli, cashews and zucchini and simmer until the curry has thickened and the vegetables have softened.
This dish is vegan, gluten free, dairy free, sugar free, soy free.
To Cook: Defrost from frozen and reheat slowly. Season to taste with salt and pepper and serve with steamed rice or naan bread and a dollop of greek yoghurt.
