Our chef's take on a French classic, beef cheeks are one of those secondary cuts which shines when given some love and cooking time on a low heat.  This dish is made with beef cheeks, tomato paste, ginger, onion, celery, carrot, red wine vinegar, beef stock, soy, bay leaf, black pepper, thyme, Chinese rice wine vinegar.

Serve with mash potato or polenta with some steamed seasonal greens.  Its also a delicious pie base for the adventurous.
